  • 1 tbsp canola oil
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 2 cans young green jackfruit in brine, rinsed (or 1 fresh jackfruit)
  • Spiced broth, whisked:
    1/4 tsp salt (optional)
    1/2 tsp pepper
    1 tsp cumin
    1 tsp chili powder
    1 tsp paprika
    1/2 tsp cayenne pepper (optional)
    2 cups vegetable broth
    1 tsp liquid smoke
  • 1/2 – 3/4 cup BBQ sauce
  • 6 buns
  • Coleslaw (optional)

Hint: jackfruit can be found in select supermarkets (international aisle), Asian markets, and specialty food stores. Do not substitute with jackfruit in syrup.

  1. Preheat oven to 350ºF/180ºC.
  2. Heat oil over medium heat in a large pan.
  3. Add onions and garlic, cook until translucent, about 5 minutes.
  4. Add jackfruit and spiced broth, bring to a boil.
  5. Reduce heat to medium-low, cover and simmer for 45 minutes.
  6. Break apart the jackfruit with a fork or potato masher.
  7. Cook for an additional 5 minutes, or until most of the liquid is absorbed.
  8. Spread the jackfruit on a prepared baking sheet, bake for 45 minutes.
  9. Pour the BBQ sauce over the jackfruit, mix, and cook for an additional 15 minutes.
  10. Serve warm on a bun with coleslaw. Enjoy!
