Pomegranate & Mango Baked Oatmeal

Pomegranate & Mango Baked Oatmeal

Yummy oatmeal adapted from Treat & Trick. A great breakfast treat or dinner dessert.


  • 2.5 cups rolled oats
  • 1/4 cup brown sugar
  • 60 g melted butter
  • 2 large eggs (or 2 flax eggs or other egg substitute)
  • 1/2 tsp salt
  • 1 tsp vanilla essence
  • 1 tsp baking powder
  • 1 cup mango juice/milk
  • 1 medium mango sliced
  • 1 1/2 cup pomegranate seeds


  1. Preheat the over to 350ºF/180ºC.
  2. Grease a 9″ round or square baking pan.
  3. In a mixing bowl, whisk together dry ingredients: rolled oats, baking powder and salt.
  4. In a separate bowl, combine wet ingredients: melted butter, eggs, vanilla and mango juice or milk.
  5. Add wet ingredients to the rolled oat mixture, stir to combine.
  6. Spoon mixture into prepared pan.
  7. Sprinkle top with mango and pomegranate.
  8. Bake for 40-50 minutes or until a toothpick inserted comes out clean.
  9. Cool in pan for 10 minutes, transfer onto rack to cool.
